Ingredients:

  • 1/3 cup green onion
  • 1 package (8 oz.) cream cheese
  • 1/2 cup fresh spinach
  • 1/2 – 1 artichoke heart

Instructions:

Step Description Time
1 Soften cream cheese and blend in onions and spinach. 20 minutes
2 Place the mixture in the refrigerator to chill.
3 Once chilled, portion out using an ice cream scoop.
4 Roll 6 oz. portions into balls, wrap, and store or freeze until ready to serve.
5 To serve, place one portion into a microwave-safe bowl and microwave on high for about 40 seconds. 1 minute
6 Add artichoke hearts to the bowl and return to the microwave for an additional 30 seconds. 30 seconds
7 Toast the top of the dip under the broiler for a few seconds for a golden finish.
8 Optionally, you can substitute 1/4 cup of lobster or shrimp for the artichoke hearts for a delicious variation.
