Instructions

  1. Prepare the Mutton
    Begin by thoroughly cleaning and rinsing the mutton pieces. Add 1 teaspoon of salt and place the mutton in a pressure cooker with ½ cup of water. Pressure cook the mutton for about 3 whistles to ensure it is tender and cooked through.

  2. Make the Green Masala Paste
    While the mutton is cooking, prepare the green masala. In a blender or food processor, grind the coriander leaves, mint leaves, green chillies, ginger, garlic, cloves, cinnamon stick, cardamom, and star anise with a little water to form a smooth paste.

  3. Cook the Curry Base
    Heat 1 teaspoon of sunflower oil in a deep pan or kadhai. Add the pureed onion and sauté until the raw smell of the onion disappears and it turns golden brown. Next, add the pureed tomatoes and cook for a few minutes, stirring occasionally, until the oil begins to separate from the masala mixture.

  4. Combine Green Masala with Curry
    Add the freshly ground green masala paste to the pan. Cook this mixture for about 5 minutes, allowing the flavors to blend together and the spices to release their aroma.
