Butternut Squash and Apple Soup Recipe ๐Ÿฒ

Overview:

This Butternut Squash and Apple Soup recipe holds a special place in the heart of our family, passed down from the elegant kitchens of Annemarie Huste, the esteemed personal chef to Billy Rose and Jacqueline Kennedy Onassis. It’s a delightful combination of tart green apples, creamy butternut squash, and a touch of aromatic herbs, creating a soup that’s both comforting and full of flavor. Perfect for chilly evenings, this soup has become a cherished tradition in our home, eagerly anticipated by all during our weekly “soup night” gatherings.

Ingredients:

  • 1 large butternut squash, halved, peeled, and seeded
  • 3 tart green apples, peeled, cored, and coarsely chopped
  • 1 onion, peeled and coarsely chopped
  • 1 sprig of fresh rosemary
  • 1 teaspoon of dried marjoram
  • 4 cups of chicken broth
  • 2 cups of water
  • 2 slices of bread, torn into pieces
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1/4 cup of heavy cream
  • Fresh chopped parsley, for garnish

Instructions:

Step Description
1 Cut the butternut squash in half, peel it, and remove the seeds.
2 Peel, core, and coarsely chop the green apples.
3 Peel the onion and chop it coarsely.
4 In a heavy saucepan, combine the butternut squash, chopped apples, onion, rosemary, marjoram, chicken broth, water, torn bread, salt, and pepper.
5 Bring the mixture to a boil, then reduce the heat and simmer for 45 minutes, allowing the flavors to meld together.
6 Carefully puree the soup in batches in a blender until smooth, ensuring not to overfill the blender.
7 Return the pureed soup to the saucepan and bring it back to a gentle boil.
8 Just before serving, stir in the heavy cream, adding a touch of richness to the soup.
9 Serve the soup hot, garnished with a sprinkle of fresh chopped parsley on top, adding a vibrant finishing touch.
