Ingredients

  • 1 cup sweet rice
  • 3 cups water
  • 3 1/2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1-2 tablespoons honey
  • 1/2 tablespoon vinegar (optional)
  • 1/4 cup soy sauce
  • 2 cans Spam (regular or low-sodium), sliced into 8 pieces

Instructions

  1. Prepare the Rice:

    • Rinse the sweet rice under cold water until the water runs clear to remove excess starch.
    • In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker’s instructions or bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until rice is tender and water is absorbed.
  2. Prepare the Spam:

    • While the rice is cooking, heat a non-stick skillet over medium-high heat.
    • Add the Spam slices and sear on each side until browned and slightly crispy, about 2-3 minutes per side. Remove from skillet and set aside.
  3. Prepare the Sauce:

    • In a small bowl, mix together 3 1/2 tablespoons of rice vinegar, 1 tablespoon of soy sauce, and 1-2 tablespoons of honey (adjust honey to taste). If desired, add 1/2 tablespoon of vinegar for extra tanginess.
  4. Combine Spam and Sauce:

  5. Assemble the Musubi:
