Hazelnut Torte Recipe

Ingredients:

5 Eggs
3/4 cup Sugar
6 tbsp Water
1 3/4 cups Plain Flour
1 tsp Baking Powder
1 1/2 cups Hazelnuts
1 tsp Vanilla Essence
2 tbsp Icing Sugar

Instructions:

  1. Prepare the Batter:

    • In a mixing bowl, beat the egg yolks and sugar until very light and fluffy, which should take about 5 minutes of vigorous beating.
    • Slowly incorporate the water into the egg yolk mixture, ensuring it’s well combined.
    • Sift the plain flour and baking powder together, then mix in 1 cup of finely chopped hazelnuts.
    • Gently fold the flour mixture into the beaten egg yolks until fully incorporated.
  2. Whip Egg Whites:

    • In a separate clean bowl, beat the egg whites until soft peaks form, creating a light and airy texture.
  3. Combine Batter and Whites:

    • Carefully fold the whipped egg whites into the batter mixture, ensuring not to deflate the whites, until evenly combined.
  4. Bake the Torte:

    • Preheat your oven to 180°C (350°F).
    • Grease and flour a 10-inch springform pan to prevent sticking.
    • Pour the prepared batter into the pan, spreading it evenly.
    • Bake in the preheated oven for approximately 30 minutes, or until the torte is golden brown and a toothpick inserted into the center comes out clean.
  5. Cool and Assemble:

    • Allow the torte to cool completely on a wire rack before handling.
    • Once cooled, carefully slice the torte horizontally into two even layers.
  6. Prepare Whipped Cream:

    • In a mixing bowl, whip the cream until it reaches stiff peaks.
    • Gently fold in the vanilla essence, icing sugar, and the remaining 1/2 cup of finely chopped hazelnuts until well combined.
  7. Assemble the Torte:

    • Spread a generous layer of the prepared whipped cream mixture onto one of the torte layers.
    • Carefully place the second torte layer on top and cover the entire torte with the remaining whipped cream mixture.
    • Chill the assembled torte until ready to serve, allowing the flavors to meld together.
  8. Garnish and Serve:

    • Prior to serving, garnish the torte with fresh strawberries for a fruity touch, or for an extra special presentation, decorate with hazelnuts dipped in chocolate arranged in small clusters atop the whipped cream.
    • Note: For best results, blanch the hazelnuts by boiling them for 5 minutes, then removing the skins. Grind the nuts finely in a blender or chop them finely with a sharp knife.
