Hazelnut Sablé Cookies with Dark Chocolate Layers

Instructions:

To prepare the Hazelnut Sablé Cookies with Dark Chocolate Layers, begin by making the hazelnut shortcrust pastry. In a food processor, combine the cold butter (cut into cubes), all-purpose flour, and powdered sugar. Add the egg yolk and hazelnut flour. Pulse the ingredients together until the dough starts to form.

Once the dough begins to come together, transfer it to a clean work surface and gently knead it into a ball. Wrap the dough in plastic wrap and refrigerate it for at least 30 minutes to allow it to firm up.
