Description:

Indulge in the delightful flavors of Linzertorte Bars – a Scandinavian treat perfect for Christmas or any occasion. These bars boast a buttery crust filled with toasted hazelnuts, warm spices, and a generous layer of jam, finished with a dusting of confectioners’ sugar.

Ingredients:

  • 3/4 cup unsalted butter
  • 1/2 cup sugar
  • 1 egg
  • 1 cup toasted hazelnuts
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1 1/2 cups all-purpose flour
  • Confectioners’ sugar for dusting

Instructions:

  1. Cream Butter and Sugar: In a large bowl, using an electric mixer or a wooden spoon, cream together the unsalted butter and sugar until smooth and creamy.

  2. Add Egg: Beat in the egg until the mixture is light and fluffy.

  3. Incorporate Dry Ingredients: Stir in the toasted hazelnuts, nutmeg, cinnamon, cloves, and all-purpose flour until well combined.

  4. Chill Dough: Cover the dough with plastic wrap and refrigerate for 30 minutes to firm up.

  5. Preheat Oven: Meanwhile, preheat your oven to 350°F (175°C).

  6. Prepare Pan: Lightly grease a 9-inch square baking pan to prevent sticking.

  7. Roll Out Dough: Take one-third of the dough and set it aside. Roll out the remaining dough between two sheets of plastic wrap to create a 10-inch square.

  8. Line Pan: Remove the top sheet of plastic wrap and carefully transfer the dough into the prepared baking pan, plastic side up. Press the dough onto the bottom and 1/2 inch up the sides of the pan.

  9. Spread Jam: Evenly spread your favorite jam over the dough layer.

  10. Roll Out Reserved Dough: Roll out the reserved dough between two sheets of plastic wrap to create a 9 1/2 inch square, about 1/4-inch thick.

  11. Cut Strips: Using a pastry wheel, cut the rolled dough into 1/2-inch strips.

  12. Create Lattice: Arrange the strips in a crisscross fashion over the jam layer, pressing the ends onto the edges of the bottom crust to form a lattice pattern.

  13. Bake: Place the assembled bars in the preheated oven and bake for 40 to 45 minutes, or until the crust is lightly browned.

  14. Cool and Serve: Allow the bars to cool in the pan on a wire rack. Once cooled, cut them into 2 1/4 inch squares.

  15. Dust with Confectioners’ Sugar: Before serving, dust the bars with a generous sprinkling of confectioners’ sugar for an extra touch of sweetness.
