Ingredient | Quantity |
---|---|
Hazelnut flour | 70g |
All-purpose flour | 250g |
Butter | 115g |
Egg | 55g |
Powdered sugar | 140g |
Hazelnut paste | 30g |
Lemon zest | 1 |
Figs | 1110g |
Sugar | 460g |
Lemon juice | 50g |
Water | 70g |
Fresh cream | 20g |
Chopped hazelnuts | 30g |
Instructions:
Step 1: Prepare the Fig Jam
- Begin by washing and preparing the figs. Place them in a saucepan, adding water, and cook over medium heat. Occasionally skim the foam from the top.
- When the mixture reaches a temperature of 104°C (219°F), use a cooking thermometer to ensure the jam has reached the correct consistency. Remove the pan from the heat once the correct temperature is achieved.
- Transfer the jam to a bowl to cool. If you’d like to preserve the jam for longer periods, sterilize the jars before storing it.
Step 2: Prepare the Hazelnut Shortcrust
- In a food processor, combine the all-purpose flour with the hazelnut flour. Pulse for a few seconds until the mixture forms a sandy texture.
- Transfer this mixture to a clean surface and form a well in the center. Add the powdered sugar and grated lemon zest.
- Quickly work the ingredients together by hand, ensuring not to overheat the dough. Then, incorporate the hazelnut paste into the dough.
- Once the dough is well mixed, divide it into two portions—one larger for the base and the other smaller for the decorative strips.
- Roll the larger portion of dough out on a lightly floured surface to about 1/2 cm thick. Set the smaller portion aside for later use.
Step 3: Assemble the Tart
- Grease and flour a 24 cm (9-inch) tart pan. Carefully fit the rolled-out dough into the pan, pressing it into the edges.
- Spread the cooled fig jam evenly over the bottom of the dough.
- Roll out the remaining dough and cut it into 2 cm wide strips. Use a pizza cutter or knife to form small diamond shapes for the decoration. Arrange the strips in a lattice pattern on top of the jam.
Step 4: Bake the Tart
- Preheat your oven to 180°C (350°F). For fan ovens, lower the temperature to 160°C (320°F).
- Before baking, brush the top of the lattice with a thin layer of fresh cream to give it a beautiful golden finish.
- Place the tart in the oven and bake for about 30 minutes, or 20 minutes if using a fan oven, or until the crust is golden brown and the jam is bubbly.
Step 5: Serve the Tart
- Once the hazelnut tart with fig jam is baked, remove it from the oven and allow it to cool completely before slicing.
- Garnish with a sprinkle of chopped hazelnuts for an extra crunch and serve.
