Hazelnut Tart with Fig Jam

Instructions:

Step 1: Prepare the Fig Jam

  1. Begin by washing and preparing the figs. Place them in a saucepan, adding water, and cook over medium heat. Occasionally skim the foam from the top.
  2. When the mixture reaches a temperature of 104°C (219°F), use a cooking thermometer to ensure the jam has reached the correct consistency. Remove the pan from the heat once the correct temperature is achieved.
  3. Transfer the jam to a bowl to cool. If you’d like to preserve the jam for longer periods, sterilize the jars before storing it.

Step 2: Prepare the Hazelnut Shortcrust

  1. In a food processor, combine the all-purpose flour with the hazelnut flour. Pulse for a few seconds until the mixture forms a sandy texture.

  2. Spread the cooled fig jam evenly over the bottom of the dough.
  3. Roll out the remaining dough and cut it into 2 cm wide strips. Use a pizza cutter or knife to form small diamond shapes for the decoration. Arrange the strips in a lattice pattern on top of the jam.

  1. Preheat your oven to 180°C (350°F). For fan ovens, lower the temperature to 160°C (320°F).
