Ingredients:
- 300 grams Amaranth leaves (washed and chopped)
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds
- 1 tsp Split white urad dal
- 1 sprig Curry leaves
- 1/4 tsp Asafoetida (hing)
- Salt to taste
- 1 tsp Grated coconut
Preparation Time: 20 minutes
Cook Time: 15 minutes
Instructions:
- First, steam the amaranth leaves in a pressure cooker with some water and salt for one whistle. After the whistle, turn off the gas and place the cooker under cold water. Remove the amaranth leaves and set them aside.
- In a small pan, heat some oil. Add mustard seeds, cumin seeds, and urad dal, and sauté for about 20 seconds.
- Next, add asafoetida (hing) and curry leaves, and stir to combine.
- Pour this tempering over the steamed amaranth leaves and mix well.
- Finally, add the grated coconut and give it a final stir.
Serve this healthy Amaranth Keerai Poriyal with mixed vegetable sambar and rice for a wholesome lunch.
