Ingredients

  • 250g potatoes (cut into thick, straight pieces)
  • A pinch of turmeric powder
  • 10 small onions (sliced thin)
  • 3 garlic cloves (finely chopped)
  • 1 tsp red chili flakes
  • Salt to taste
  • 1 sprig curry leaves
  • Coconut oil (as needed)
  • 2 tbsp coconut (chopped into pieces)

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Instructions

  1. Begin by washing the potatoes thoroughly and cutting them into thick, straight pieces.
  2. Preheat the oven to 150°C (300°F).
  3. In a pressure cooker, add the potatoes, turmeric powder, onions, garlic, red chili flakes, salt, curry leaves, and coconut pieces. Close the lid and cook for one whistle. Once the cooker cools down naturally, open the lid.
  4. Grease a baking tray and spread the cooked potato mixture evenly on it. Drizzle some coconut oil over the top.
  5. Bake for 8 to 10 minutes.
  6. Remove from the oven and serve hot.

Serving Suggestion
Serve the Baked Chinese Potato with Panchmel Dal and Cumin Rice for a complete lunch.
