Turmeric powder (Haldi) 1/4 teaspoon
Gram flour (Besan) 1-1/2 tablespoon
Cashew nuts, powdered 2 tablespoons
Whole Wheat Bread crumbs 3 tablespoons
Salt To taste
Whole Black Peppercorns, crushed 1/2 tablespoon
Cardamom (Elaichi) Pods/Seeds, powdered 1/4 tablespoon
Lemon wedges For garnish
Onion, chopped For garnish

Instructions

  1. Preheat the Oven
    Start by preheating your oven to 180°C (350°F) for 10 minutes. Grease a baking tray with a little oil to prevent the kebabs from sticking.

  2. Sauté the Vegetables
    Heat 1 teaspoon of oil in a non-stick pan. Once the oil is hot, add cumin seeds and sauté them until fragrant. Follow with finely chopped green chillies and sauté for about 1 minute.
    Add the finely chopped carrot and sauté for 2-3 minutes until slightly tender. Then, add the French beans, cabbage, and green peas. Stir-fry these vegetables for 2-3 minutes.
    Sprinkle in turmeric powder, mix everything well, and cook until the vegetables are softened and combined. Set the cooked vegetable mixture aside to cool.

  3. Grind the Vegetable Mixture
    Transfer the sautéed vegetables into a mixer jar. Grind them coarsely, not into a fine paste, and set this mixture aside in a bowl.

  4. Prepare the Mixture for Kebabs
    In the same pan, add the gram flour and sauté it until it becomes fragrant and slightly golden. Add the powdered cashew nuts to the pan and sauté for another minute.
    Lower the heat, and then add the ground vegetable mixture to the pan. Mix well and cook for another 2-3 minutes, allowing all the ingredients to combine and the raw smell of gram flour to disappear.

  5. Mix the Rest of the Ingredients
    Transfer the vegetable and gram flour mixture into a large bowl. Add breadcrumbs, salt to taste, crushed black peppercorns, and cardamom powder.
    Stir in the garam masala and mashed potatoes to bind the mixture together.

  6. Shape the Kebabs
    Divide the mixture into large equal portions. Shape each portion around a skewer or satay stick, pressing gently to form a cylindrical kebab shape. Make sure they are tightly packed so they don’t break while baking.

  7. Bake the Seekh Kebabs
    Place the shaped kebabs on the greased baking tray and put them in the preheated oven. Bake for 10-12 minutes, flipping them every 4-5 minutes so that they cook evenly on all sides.

  8. Serve and Enjoy
