Kavuni Arisi Paniyaram, also known as Black Rice Paniyaram, is a nutritious and traditional Chettinad snack made from Kavuni Arisi (Black Rice) and Karupatti (Palm Jaggery). Ingredients:
- 1 cup Black Rice
- 6 tablespoons Palm Jaggery (powdered)
- 2 tablespoons Whole Wheat Flour
- 2-3 tablespoons Health Mix (optional)
- Oil (for frying in paniyaram pan)

Instructions:

Soak the Rice: Wash the Black Rice thoroughly and soak it in enough water for about 4 hours. After soaking, drain the rice.

Grind the Rice: Add the drained rice to a mixer along with 1/2 cup (or as needed) of water. Grind the mixture into a smooth batter, similar to dosa batter consistency.

Prepare the Batter: Transfer the batter into a mixing bowl. Add whole wheat flour and powdered palm jaggery to the batter. For an added boost of nutrition, you can also add 2-3 tablespoons of health mix or sathu maavu, though this is optional. Mix everything together to achieve a smooth batter consistency.

Heat the Paniyaram Pan: Heat a paniyaram pan over medium heat, adding a little oil to each hole. Once the pan is hot, ladle the batter into each hole, filling them halfway.

Cook the Paniyarams: Cover the pan with a lid and cook for 3-4 minutes, checking at intervals of 30 seconds to ensure they are cooking evenly. Flip the paniyaram using a spoon and cook for another 2-3 minutes on the other side until golden brown and crisp.

Serve: Once cooked, remove the paniyaram from the pan. Repeat the process for the remaining batter.
