Ingredients:

  • 3 eggs
  • 1 cup broccoli, chopped
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 6 cloves garlic, finely chopped
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 2 tablespoons coriander leaves, finely chopped
  • Salt, to taste
  • 2 tablespoons oil

Instructions:

  1. Heat the oil in a pan over medium heat. Add the finely chopped onions and sauté until they turn soft and golden.
  2. Add the chopped garlic and cook for another minute until fragrant.
  3. Add the chopped tomatoes and cook until they soften and break down into a mushy consistency.
  4. Stir in the chopped broccoli and cook for 10 minutes, allowing the broccoli to soften and blend with the other ingredients.
  5. Season with turmeric powder, red chili powder, and salt. Stir well to coat the vegetables evenly with the spices.
  6. Crack the eggs one by one into the pan, mixing them gently into the cooked vegetables. Stir continuously to ensure the eggs cook evenly and break apart into a scrambled texture (bhurji).
  7. Once the eggs are cooked through and well mixed with the vegetables, remove from heat.
  8. Garnish with freshly chopped coriander leaves and give it a final mix.
