Ingredients:

  • 1/2 cup Broken Wheat (Dalia/ Godumai Rava)
  • 4 tbsp Bajra (seeds)
  • 4 tbsp Ragi Seeds
  • 4 tbsp Jowar Seeds
  • 2 tbsp Foxtail Millet
  • 1 tbsp Barley (seeds)
  • 1 tsp Cumin seeds (Jeera)
  • 1/2 cup Green peas (Matar)
  • 1 Carrot (Gajjar), finely chopped
  • 2 Green Chilies, finely chopped
  • 1 Onion, finely chopped
  • 1/2 tsp Ginger, grated
  • Salt, to taste
  • 2 tbsp Ghee
  • 1 cup Water
  • Fresh Coriander (Dhania) Leaves, for garnish
  • 1 tsp Lemon juice

Preparation Time: 20 minutes
Cooking Time: 30 minutes

Instructions:

  1. Begin by mixing the broken wheat and millets. Wash them thoroughly and strain the water, setting them aside.
  2. Heat ghee in a pressure cooker. Add cumin seeds and let them crackle.
  3. Add grated ginger, chopped green chilies, and onion to the cooker, sautรฉing until fragrant.
  4. Stir in green peas and chopped carrots, cooking for a few minutes. You can also add other vegetables like capsicum, cauliflower, corn, or mushrooms, depending on your preference.
  5. Add the washed broken wheat and millet mixture to the cooked vegetables. Stir fry everything until it turns golden and releases a roasted aroma.
  6. Pour in 1 cup of water (or enough to cover the mixture) and add salt to taste. Pressure cook for 2-3 whistles.
  7. Turn off the heat and allow the steam to settle. Once the pressure has released, open the cooker and mix everything gently with a spatula.
  8. Garnish with fresh coriander leaves and squeeze lemon juice over the upma for added flavor.
