Carrot and Coriander Soup Recipe

A perfect recipe for a hearty dinner or a starter at your house parties. This carrot and coriander soup is packed with the goodness of carrots, making it ideal for winter days. It’s light yet flavorful and easy to prepare.

Ingredients:

  • 1 Carrot, chopped
  • 1/2 Onion, chopped
  • 2 tablespoons Fresh coriander leaves, chopped
  • 1 Green chili, finely sliced
  • 2 Garlic cloves, chopped
  • 2 Cloves
  • Salt, to taste
  • 1/2 Lemon, juiced
  • Black pepper powder, to taste
  • Fresh coriander leaves, for garnish
  • 2 tablespoons Ghee or butter

Preparation Time: 10 minutes
Cook Time: 15 minutes

Instructions:

  1. Heat ghee or butter in a pressure cooker. Add chopped onions, garlic, and green chili. Sauté until the onions turn soft.
  2. Add chopped carrots, coriander leaves, and cloves. Cook for 1 minute to blend the flavors.
  3. Add water as needed, close the pressure cooker, and cook for 1 whistle. Let the pressure release naturally.
  4. Separate the cooked vegetables and stock. Strain the stock into a saucepan.
  5. Remove the green chili and cloves from the vegetables. Transfer the remaining mixture to a blender and grind it into a smooth puree.
  6. Add the puree to the strained stock and stir well. Season with salt and black pepper. Bring it to a boil.
  7. Once it boils, reduce the heat and let it simmer for a few more minutes.
  8. Garnish with fresh coriander leaves and a squeeze of lemon juice.

Serve this delicious Carrot and Coriander Soup before your main meal or as a delightful evening snack.
