Healthy Carrot Methi & Mooli Thepla Recipe

Thepla is one of Gujarat’s most beloved comfort foods. Whether on a long-distance train or during a trekking trip, you’ll find Gujaratis enjoying Thepla. This flavorful flatbread, enriched with carrots, radish, and fenugreek leaves, is a perfect choice for a wholesome lunch.

Ingredients:

  • 2 cups Whole Wheat Flour
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Red Chilli powder (optional)
  • 1 teaspoon Cumin powder (Jeera)
  • ½ teaspoon Asafoetida (Hing)
  • ½ cup Carrot (Gajjar), grated
  • ½ cup Mooli (Radish), grated
  • ½ cup Methi Leaves (Fenugreek Leaves), finely chopped
  • 1 Green Chilli, finely chopped
  • Oil, for cooking the Thepla
  • Salt, to taste

Preparation Time: 5 minutes

Cook Time: 40 minutes

Instructions:

  1. In a large mixing bowl, combine all the dry ingredients: whole wheat flour, cumin powder, turmeric powder, red chili powder (optional), asafoetida, and fenugreek leaves. Mix thoroughly to combine.

  2. Add the finely chopped green chili and the grated carrot and radish into the mixture.

  3. Gradually add water as needed, and knead the dough into a smooth, firm consistency. Add the oil and continue kneading until the dough is smooth and well-coated.

  4. Cover the dough with a damp cloth and let it rest for 15 minutes.

  5. After resting, divide the dough into equal portions. Roll each portion into a ball and flatten it with your palm.

  6. Dust each dough ball lightly with flour and roll it into a thin circle, about 6 inches in diameter. Continue dusting with dry flour as needed to prevent sticking.

  7. Preheat a tawa or flat skillet on medium heat. Once hot, place the rolled thepla onto the skillet and cook for about 1-2 minutes on each side, until golden brown spots appear.

  8. Once cooked, remove from the skillet and set aside. Repeat the process with the remaining dough portions.

  9. Serve hot with yogurt, pickle, or chutney for a delightful meal!
