Carrot Peanut Chutney (South Indian Style)

Ingredients:

Carrot 1, peeled and chopped
Peanuts (roasted) 2 tbsp
Mint leaves 1/4 cup
Coconut (grated) 1 tbsp
Onion 1, chopped
Garlic 1 tbsp, chopped
Green chilies 3, chopped
Salt To taste
Sesame oil 1 tsp
Mustard seeds (rai) 1 tsp
Curry leaves 1 sprig

Total Time: 30 minutes

Serves: 4-6 people


Instructions:

  1. Roast the Peanuts:

    • Begin by roasting the peanuts in a dry pan until they turn golden brown and fragrant. Once roasted, set them aside to cool, then remove the skin and set aside for later use.
  2. Prepare the Tempering:

    • Heat a small amount of sesame oil in a pan over medium heat. Add the mustard seeds and curry leaves. Allow them to splutter for about 10 seconds.
  3. Cook the Onion, Garlic, and Chilies:

    • Add the chopped onion, green chilies, and garlic to the pan. Sauté until the onions become soft and translucent, which will take about 3-4 minutes.
  4. Add Vegetables and Simmer:

    • To the pan, add the grated coconut, chopped carrot, and mint leaves. Stir well and cook for an additional 5 minutes, allowing the flavors to blend. Turn off the heat and let the mixture cool.
  5. Blend the Chutney:

    • Once the mixture has cooled, transfer it to a blender. Add a little water and blend it into a smooth or slightly coarse paste, as per your preference.
  6. Season and Serve:

    • Add salt to taste, stir, and your chutney is ready to serve. Pair it with your favorite dosa, idli, or even enjoy it as a side dish with rice or roti.

Notes:

  • If you prefer, you can skip the coconut for a lighter version of the chutney.
  • Adjust the level of spiciness by adding more or fewer green chilies, according to your taste.
