Foxtail Millet Rava Idli is a nutritious, easy-to-make breakfast dish made with foxtail millet and curd, requiring no fermentation. The batter is prepared quickly by mixing millet with curd and spices, making it a perfect choice for a wholesome meal at breakfast or dinner.

Ingredients:

  • 3/4 cup foxtail millet
  • 3/4 cup curd
  • 1/2 cup grated carrot
  • 2 green chillies, finely chopped
  • 1/2 inch ginger, grated
  • A pinch of Eno fruit salt
  • A little coriander leaves, chopped
  • Water, as needed
  • Salt, to taste

For Tempering:

  • 1 teaspoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon white urad dal
  • 1/2 teaspoon chana dal
  • A few cashews
  • A few curry leaves

Preparation Time: 25 minutes
Cooking Time: 15 minutes

Instructions:

  1. Begin by grinding foxtail millet in a mixer grinder to a fine powder. Set it aside.
  2. Heat oil in a pan. Add mustard seeds and let them crackle for about 10 seconds.
  3. Next, add urad dal, chana dal, and cook for 1 minute.
  4. Add cashews, curry leaves, and green chillies. Sauté for another minute.
  5. Add the ground foxtail millet rava to the pan and fry for 2-3 minutes, stirring occasionally.
  6. Add grated carrot and ginger, and cook for another minute. Turn off the heat and allow the mixture to cool.
  7. Once the mixture has cooled, add salt, curd, and chopped coriander leaves. Mix well. Gradually add water to form a smooth idli batter. Let it rest for 15-20 minutes.
  8. Grease the idli moulds with ghee or oil and set them aside.
  9. Just before steaming, add a pinch of Eno fruit salt to the batter and mix well.
  10. Pour the batter into the prepared idli moulds. Place the moulds in a steamer and steam for 10-12 minutes or until a toothpick inserted comes out clean.
  11. Once done, remove the idlis and serve hot.
