Instructions:

  1. Roast the Broken Wheat and Moong Dal:
    Begin by placing a wide pan over medium-low heat. Add the broken wheat (Dalia) to the pan and dry roast it until it becomes hot to touch, about 3-4 minutes. Be careful not to over-roast it. Once done, transfer the broken wheat to a bowl and set it aside.

  2. Roast the Moong Dal:
    In the same pan, dry roast the moong dal until it becomes fragrant, for about 3-4 minutes. Once roasted, mix the broken wheat and moong dal together and transfer the mixture to a pressure cooker. Add 1/2 cup of water and cook it on a low to medium heat for 4 whistles.

  3. Prepare the Jaggery Syrup:
    While the dalia and dal mixture is cooking, place the powdered jaggery in a mixing bowl and add 1/2 cup of water. Stir well to dissolve the jaggery completely, then sieve the mixture to remove any impurities.

  4. Combine the Jaggery Syrup and Dal Mixture:
    Place a wide pan over medium heat and add the jaggery syrup to it. Let it boil on a low flame for about 5 minutes. Add the cardamom powder to the syrup, followed by the cooked broken wheat and moong dal mixture. Stir well to combine and let it simmer for another 3-4 minutes, allowing the flavors to meld.

  5. Add Coconut and Milk:
    At this point, you can add the grated coconut (optional) to the payasam, mixing it in thoroughly. Gradually pour in the milk, stirring constantly to blend it in smoothly. Continue to simmer for a few more minutes until the payasam reaches a creamy consistency.

  6. Prepare the Tadka (Tempering):
    In a separate small pan, heat 1 teaspoon of ghee over medium heat. Add the cashew nuts and sauté until they turn golden brown. Once done, pour the cashew nuts and ghee over the prepared payasam.

  7. Serve:
    Mix the cashews into the payasam and serve hot or chilled, depending on your preference. This delicious Godhuma Rava Payasam makes for an excellent dessert during festive meals or even as a sweet treat after a simple South Indian meal.
