- 1 Cup Rice flour
- 1/2 Teaspoon Ajwain (Carom seeds)
- 2 Teaspoons Cumin seeds (Jeera)

- 2 Green Chillies, finely chopped
- 1 Inch Ginger, finely chopped

Prepare the Steamer: Preheat a steamer with water to prepare for steaming the Khichu.

Boil Water and Spices: In a separate pan, heat 2 cups of water. Add ajwain, cumin seeds, salt, ginger, and green chillies to the boiling water. Let the mixture come to a rolling boil.

Add Rice Flour: Without lowering the heat, quickly scatter the rice flour over the boiling water (do not stir immediately). Allow the water to rise on its own as the rice flour begins to moisten within 30 seconds.

Stir the Mixture: Using the back of a wooden ladle, stir the mixture vigorously for a minute until it forms a dough.

Shape the Dough: Remove the mixture from the heat and transfer it into a bowl. Let the dough cool slightly, but it should still be warm enough to handle. Pinch the dough into 12 equal-sized balls and shape them into small disks with an indent in the center, resembling donuts.

Steam the Khichu: Place the dough disks into the preheated steamer and steam for 5-7 minutes until they are cooked through and soft.
