Chana dal (Bengal Gram Dal) 1 tablespoon
Cashew nuts 1 tablespoon (broken)

Instructions:

  1. Prepare the Seasoning (Tadka):

    • Heat 1 teaspoon of oil in a skillet over medium heat. Add 1/2 teaspoon mustard seeds and wait until they begin to splutter.
    • Add 1 tablespoon chana dal and roast it until it turns golden brown.
    • Once the dal is golden, add 2 finely chopped green chillies, 1 sprig curry leaves (finely chopped), and 1/4 teaspoon asafoetida. Sauté everything for a few seconds, then turn off the heat.
    • Set the seasoning aside to cool.
  2. Roast the Oats:

    • In another pan, dry roast the 1-1/2 cups of instant oats on medium heat until you smell a roasted aroma and the color slightly changes. Allow the oats to cool before blending them into a fine powder. Set this oat powder aside.
  3. Prepare the Idli Batter:

    • In a large mixing bowl, combine the roasted oats powder, 1/2 cup roasted rava, the cooled seasoning ingredients, 1 grated carrot, and a bunch of finely chopped coriander leaves. Mix them well.
    • Add 1 cup of curd (yogurt), and salt to taste. Gradually add a little water to achieve a thick batter that is slightly looser than traditional idli batter.
    • Set the batter aside for 10-15 minutes to rest. During this time, the batter will thicken.
  4. Add Enos Fruit Salt:

    • After the resting period, add 1/2 teaspoon of Enos Fruit Salt to the batter. Mix gently to incorporate.
  5. Steam the Idlis:

    • Preheat your idli steamer with water. Grease the idli plates with a little oil.
    • Pour the prepared batter into each cavity of the idli plate.
    • Steam the idlis for 10-15 minutes or until they are cooked through and a toothpick inserted comes out clean.
  6. Serving:

    • Carefully remove the idlis from the plates and serve hot with your favorite chutney or sambar. We recommend pairing these idlis with Tomato Onion Chutney or Vengayam Sambar for a traditional touch.
