Curd (Dahi/Yogurt) 1/2 cup
Enos Fruit Salt 1 teaspoon
Salt To taste
Red Chilli Powder For sprinkling
Oil 1 tablespoon (plus extra for greasing)
Mustard Seeds (Rai/Kadugu) 1/2 teaspoon
Sesame Seeds (Til) 1 teaspoon
SSP Asafoetida (Hing) 1/4 teaspoon
Green Chillies, slit 2
Curry Leaves 5 leaves
Fresh Coconut, grated For garnish
Coriander (Dhania) Leaves A few, chopped

Instructions

  1. Prepare the Batter:

    • In a large mixing bowl, combine the roasted sooji (semolina), instant oats, curd (yogurt), and salt. Gradually add water, a little at a time, stirring to form a thick batter.
    • Let the batter rest for 5 minutes to allow the oats and semolina to absorb the moisture.
    • After resting, add Enos fruit salt and mix well to combine.
  2. Steam the Dhokla:

    • Preheat a steamer by filling it with water and setting it on medium heat. Grease the dhokla plates or a steamer-friendly tray with a little oil.
    • Pour the prepared batter into the greased plates, spreading it evenly. Sprinkle a pinch of red chilli powder over the batter for added flavor.
    • Carefully place the plates in the steamer. Cover and steam for 10-15 minutes, or until a toothpick or butter knife inserted into the dhokla comes out clean. Once done, turn off the heat and let the dhokla rest for a few minutes.
  3. Prepare the Tempering (Seasoning):

    • In a small pan, heat oil. Once hot, add the mustard seeds and sesame seeds. Allow them to crackle.
    • Add the asafoetida (hing), followed by the slit green chillies and curry leaves. Stir for a few seconds to release the aroma, then remove from heat.
  4. Assemble and Garnish:

    • After the dhokla has rested, cut it into squares or diamond-shaped pieces.
    • Drizzle the prepared tempering over the steamed dhokla, ensuring it’s well coated.
    • Garnish with freshly chopped coriander leaves and a sprinkle of grated coconut for added texture and flavor.
  5. Serve:
