Italian Style Spinach Tomato Soup Recipe

Ingredients:

  • 1 onion, finely chopped
  • 2 carrots, sliced
  • 2 cups spinach, boiled and chopped
  • 3 tomatoes, pureed
  • 5 garlic cloves, minced
  • 4 cups vegetable stock
  • 1/2 tablespoon red chili flakes
  • 1/2 tablespoon paprika powder
  • 1 tablespoon oregano
  • 1 tablespoon black pepper powder
  • Salt, to taste
  • 1 tablespoon olive oil
  • 1/2 cup pasta (penne), boiled
  • 1/2 tablespoon white vinegar (optional)

Preparation Time: 15 minutes
Cooking Time: 30 minutes

Instructions:

  1. Heat olive oil in a large pan or pot. Add minced garlic and sautΓ© for 10 seconds.
  2. Add the chopped onion and cook until soft.
  3. Once the onions are soft, add paprika powder, black pepper powder, and oregano. Mix well.
  4. After 30 seconds, add spinach, tomato puree, carrots, and salt. Stir and cook for 1 minute.
  5. Add vegetable stock and vinegar (optional). Mix well and let it simmer for 15–20 minutes.
  6. Add the boiled pasta and red chili flakes. Stir and cook for another 10 minutes.
  7. Lastly, add the boiled spinach and cook for another 5 minutes.
  8. Serve hot with garlic bread for a delicious dinner or as a starter.
