Coriander (Dhania) Leaves, finely chopped (for garnish) 2 teaspoons
Mustard Seeds (Rai/Kadugu) 1 teaspoon
Oil 1 teaspoon

Instructions

  1. Cook the Jowar
    Begin by pressure cooking the coarsely ground Jowar seeds with 4 cups of water and salt. Pressure cook for about 4 whistles, then set the cooked Jowar aside.

  2. Prepare the Tempering
    Heat the oil in a wide pan over medium heat. Add the mustard seeds and let them crackle, releasing their aroma.

  3. Sauté the Vegetables
    Once the mustard seeds have crackled, add the finely chopped green chillies and curry leaves. Let them splutter for a few seconds.
    Next, add the chopped green beans and carrots along with a pinch of salt. Sauté the vegetables for about 2 minutes, until they are cooked but still retain a slight crunch.

  4. Combine Jowar and Vegetables
    Add the cooked Jowar to the pan along with a little water to adjust the consistency. Season with additional salt, if needed. Let the mixture simmer for 5 minutes, allowing the flavors to meld together.

  5. Final Touches
    Once the porridge reaches your desired consistency, turn off the heat and garnish with freshly chopped coriander leaves.

  6. Serve
