Kale and Mushroom French Soup Recipe

Ingredients:

  • 1 cup kale, chopped
  • 100 grams button mushrooms, chopped
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1 red bell pepper, chopped
  • 2 cups vegetable or chicken stock
  • 1 yellow bell pepper, chopped
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon parsley, chopped
  • 2 teaspoons cream
  • Salt, to taste
  • Black pepper powder, to taste
  • 1 teaspoon butter

Preparation Time: 15 minutes
Cooking Time: 15 minutes

Instructions:

  1. Start by washing and chopping the mushrooms. Also, chop all the vegetables and keep them separately.
  2. Heat butter in a saucepan. Add finely chopped garlic and cook for 1 minute.
  3. Add chopped onion and cook until soft.
  4. Once the onion is soft, add chopped mushrooms and cook for 2 minutes.
  5. Add the vegetable or chicken stock and bring it to a boil.
  6. Once it boils, add apple cider vinegar and mix well.
  7. Add the kale and bell peppers (both red and yellow) and cook for another 2 minutes.
  8. Stir in parsley, salt, and black pepper powder, then add the cream. Cook for another 3โ€“4 minutes.
  9. Turn off the heat and your Kale and Mushroom French Soup is ready to serve.

Serving Suggestion:
Serve the soup with garlic bread and fettuccine pasta with tomato sauce for a complete dinner experience. Enjoy!
