Kale and Mushroom French Soup Recipe

Ingredients:
- 1 cup kale, chopped
- 100 grams button mushrooms, chopped
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 red bell pepper, chopped
- 2 cups vegetable or chicken stock
- 1 yellow bell pepper, chopped
- 1 teaspoon apple cider vinegar
- 1 tablespoon parsley, chopped
- 2 teaspoons cream
- Salt, to taste
- Black pepper powder, to taste
- 1 teaspoon butter

Instructions:
- Start by washing and chopping the mushrooms. Also, chop all the vegetables and keep them separately.
- Heat butter in a saucepan. Add finely chopped garlic and cook for 1 minute.
- Add chopped onion and cook until soft.
- Once the onion is soft, add chopped mushrooms and cook for 2 minutes.
- Add the vegetable or chicken stock and bring it to a boil.
- Once it boils, add apple cider vinegar and mix well.
- Add the kale and bell peppers (both red and yellow) and cook for another 2 minutes.
- Stir in parsley, salt, and black pepper powder, then add the cream. Cook for another 3–4 minutes.
- Turn off the heat and your Kale and Mushroom French Soup is ready to serve.
Serving Suggestion:
Serve the soup with garlic bread and fettuccine pasta with tomato sauce for a complete dinner experience. Enjoy!
