Prepare the Puttu Mixture:

The mixture should hold together when pressed into a fist, yet crumble when you release the pressure. It’s important to add water slowly, allowing the warmth of your hands to help the flour absorb the moisture. The longer you spend mixing, the softer the ragi puttu will be. Once the mixture is ready, cover it and let it rest for at least 15 minutes to allow the flavors to meld. -
Steam the Ragi Puttu:
While the mixture is resting, bring water to a boil in your puttu maker (also known as a puttu kutti). Once the steam starts rising from the bottom, begin filling the puttu maker. Start by spooning in the prepared ragi puttu mixture halfway up the cylinder. Add a little grated coconut in the middle to create a white coconut layer. Continue filling the puttu maker with the remaining mixture, but do not press the mixture down tightly. Pressing it too hard will prevent the steam from passing through, resulting in dense puttu. -
Cooking:
Once the puttu maker is filled, place it atop the steaming pot and allow the ragi puttu to cook for 5 to 6 minutes. You’ll know it’s ready when you see steam rising from the top holes of the puttu maker. Turn off the heat once this happens. -
Serving:
Carefully open the lid of the puttu maker. Gently press through one end and slide the ragi puttu onto a serving plate. Repeat the process with the remaining mixture.
