Healthy Kolkata Egg Roll with Whole Wheat Paratha

Kolkata Style Egg Roll Recipe (Wrap or Frankie)

Inspired by the famous street food of Kolkata, this healthier version of the Egg Roll or Frankie uses whole wheat paratha and less oil, making it perfect for a tasty snack or a quick meal.

Ingredients

For the Paratha Dough:

  • 1 cup Whole Wheat Flour
  • Salt, to taste
  • 1 teaspoon Extra Virgin Olive Oil

For the Egg:

  • 3 Whole Eggs
  • 2 Green Chillies, finely chopped
  • 1 Onion, finely chopped
  • Fresh Coriander (Dhania) Leaves, finely chopped

For the Filling:

  • 1 Onion, thinly sliced
  • 1 Green Bell Pepper (Capsicum), thinly sliced
  • 1 Carrot (Gajjar), thinly sliced
  • 4 tablespoons Sweet and Spicy Red Chilli Sauce (Tomato Chilli Sauce)
  • 4 tablespoons English Mustard Sauce

Preparation Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 4 rolls


Instructions

  1. Prepare the Dough:
    In a mixing bowl, combine the whole wheat flour and salt. Gradually add just enough water to form a smooth dough. Once the dough comes together, add 1 teaspoon of extra virgin olive oil and knead for a few more minutes. Divide the dough into 4 equal portions and set aside.

  2. Prepare the Egg Mixture:
    In a separate bowl, whisk the eggs with finely chopped onions, green chillies, and salt. Set aside.

  3. Prepare the Filling:
    Thinly slice the onion, green bell pepper, and carrot. Combine them in a bowl and set aside.

  4. Cook the Paratha:
    Heat a tawa (griddle) and drizzle some Figaro Extra Virgin Olive Oil. Roll each portion of dough into a large circle and cook on the tawa until golden on both sides.

  5. Make the Egg Paratha:
    While the paratha is cooking, pour a ladle of the egg mixture onto the paratha. Let it cook until the egg is set, then flip to cook the other side. Repeat for all 4 parathas.

  6. Assemble the Roll:
    Place the cooked egg paratha on a flat surface with the egg side facing up. In the center of each paratha, add a portion of the sliced onion, capsicum, and carrot mixture. Drizzle with the sweet and spicy red chilli sauce and mustard sauce.

  7. Roll It Up:
    Carefully fold the paratha around the filling to create a roll. Wrap it in aluminum foil or greaseproof paper to secure it.

  8. Serve:
    Serve the Kolkata Style Egg Rolls hot as a quick dinner, picnic snack, or lunch box treat.
