Tomato 1, finely chopped
Cumin seeds 1 teaspoon
Turmeric powder 1 teaspoon
Red chili powder 1/2 teaspoon
Curry leaves 1 sprig
Coriander leaves 1 sprig, finely chopped
Oil As required
Salt To taste

Instructions:

  1. Heat the oil: Start by heating oil in a pressure cooker over medium heat. Once hot, add mustard seeds and cumin seeds. Allow them to splutter for a few seconds.

  2. Sauté the base ingredients: Add the finely chopped onion, grated garlic, and chopped tomatoes to the oil. Cook them together for about 2 minutes until the tomatoes soften and the onions turn translucent.

  3. Add the spices: Sprinkle in the turmeric powder, red chili powder, and curry leaves. Stir well to ensure the spices are evenly distributed.

  4. Cook the bottle gourd: Add the peeled and chopped bottle gourd (lauki) pieces to the cooker. Mix everything thoroughly, and then pour in 1/4 cup of water.

  5. Pressure cook: Close the pressure cooker and cook on medium heat for 3 whistles. After the whistles, turn off the heat and let the pressure release naturally.

  6. Garnish and serve: Once the cooker is safe to open, garnish the sabzi with finely chopped coriander leaves.

  7. Serving suggestion: Serve the hot Lauki Tamatar Ki Sabzi with Burani Raita and Tawa Paratha for a complete and satisfying meal.
