Prepare the Ingredients: Start by washing, peeling, and dicing the bottle gourd into 1-inch pieces. Chop the onion, tomato, and coriander leaves. Grate the garlic and set aside all your ingredients.

Cook the Sabzi: Heat oil in a pressure cooker over medium heat. Add cumin seeds and let them splutter. Then, add the finely chopped onions, grated garlic, and tomatoes. Sauté for a few minutes until the onions turn translucent and the tomatoes soften.

Add Spices and Bottle Gourd: Stir in the turmeric powder, red chilli powder, curry leaves, and salt. Add the diced bottle gourd (lauki) and mix well to coat the pieces with the spices.

Pressure Cook: Add 1/4 cup of water to the cooker, cover it with the lid, and cook under pressure for about 3 whistles. Turn off the heat and allow the pressure to release naturally.

Final Adjustments: Open the cooker, and you’ll find that the lauki has released extra water. Turn the heat back on and let the mixture simmer until the water evaporates to your desired consistency. Stir occasionally to combine the ingredients well.
