Lilve Ki Sabzi (Green Gram Curry)

Lilve, also known as green gram, is a popular ingredient in Rajasthan. It is used in a variety of dishes, one of the most famous being Lilve Ki Sabzi. This flavorful curry is easy to prepare and packed with nutrients, making it a great addition to your lunch.
Ingredients:
- Oil, as needed
- 1 cup green gram (Lilve)
- 1 potato, diced
- 1 bay leaf
- 2 cloves
- 1 big cardamom
- 1 tbsp ginger garlic paste
- 2 tbsp curd
- 1 onion, made into a paste
- 1 onion, finely chopped
- 1 tsp red chili powder
- 3/4 tsp turmeric powder
- 1 tsp coriander powder
- Salt, to taste
- Water, as needed
- 3 sprigs coriander leaves, finely chopped
Preparation Time: 15 minutes
Cook Time: 45 minutes
Instructions:
- Heat oil in a pan. Once the oil is hot, add the bay leaves, cloves, and cardamom. Sauté for about 15 seconds.
- Add the finely chopped onion and cook until soft.
- Add the diced potatoes and cook for another 5 minutes, stirring occasionally.
- Stir in the ginger-garlic-onion paste and cook for 2-3 minutes, allowing the flavors to blend.
- Add red chili powder, turmeric powder, and coriander powder. Stir well and cook for 2 more minutes.
- Mix in the curd, salt, and combine thoroughly.
- Add the green gram (Lilve), mix well, cover the pan, and cook for 5 minutes.
- After 5 minutes, add water according to your desired consistency. Let it simmer for another 4-5 minutes.
- Once done, turn off the heat and garnish with freshly chopped coriander leaves.
- Serve hot with Panchmel Daal, Boondi Raita, and Phulkas for a wholesome lunch.
