Description:
Lilve, also known as green gram, is a popular ingredient in Rajasthan. It is used in a variety of dishes, one of the most famous being Lilve Ki Sabzi. This flavorful curry is easy to prepare and packed with nutrients, making it a great addition to your lunch.

Ingredients:

  • Oil, as needed
  • 1 cup green gram (Lilve)
  • 1 potato, diced
  • 1 bay leaf
  • 2 cloves
  • 1 big cardamom
  • 1 tbsp ginger garlic paste
  • 2 tbsp curd
  • 1 onion, made into a paste
  • 1 onion, finely chopped
  • 1 tsp red chili powder
  • 3/4 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt, to taste
  • Water, as needed
  • 3 sprigs coriander leaves, finely chopped

Preparation Time: 15 minutes
Cook Time: 45 minutes

Instructions:

  1. Heat oil in a pan. Once the oil is hot, add the bay leaves, cloves, and cardamom. Sauté for about 15 seconds.
  2. Add the finely chopped onion and cook until soft.
  3. Add the diced potatoes and cook for another 5 minutes, stirring occasionally.
  4. Stir in the ginger-garlic-onion paste and cook for 2-3 minutes, allowing the flavors to blend.
  5. Add red chili powder, turmeric powder, and coriander powder. Stir well and cook for 2 more minutes.
  6. Mix in the curd, salt, and combine thoroughly.
  7. Add the green gram (Lilve), mix well, cover the pan, and cook for 5 minutes.
  8. After 5 minutes, add water according to your desired consistency. Let it simmer for another 4-5 minutes.
  9. Once done, turn off the heat and garnish with freshly chopped coriander leaves.
  10. Serve hot with Panchmel Daal, Boondi Raita, and Phulkas for a wholesome lunch.
