- 4 tbsp Hung Curd (Greek Yogurt)

Prepare the coriander leaves: Pick the coriander leaves and set them aside. Finely slice the stalks and keep them aside for later.

Cook the filling: Heat 1 tablespoon of oil in a heavy-bottomed pan over medium heat. Add the chopped garlic and coriander stalks, frying until they turn brown. Add the cooked black beans and mix well. Let it cook for 1 minute.

Add the boiled and chilled rice to the pan, and stir well. Cook for an additional 5 minutes. Remove from heat and stir in the reserved coriander leaves.

Prepare the salsa: In a bowl, combine chopped tomatoes, onions, spring onions, lime juice, and coriander leaves. Toss everything together using a fork and season to taste.
