Soft Millet Taco Recipe Topped with Hummus & Veggies
This delicious and diabetic-friendly breakfast recipe features soft millet tacos made from a blend of jowar (sorghum), bajra (pearl millet), and whole wheat flour. Ingredients:
For the Soft Tacos:
- 1/2 cup Jowar Flour (Sorghum)
- 1/2 cup Bajra Flour (Pearl Millet)
- 3/4 cup Whole Wheat Flour
- Salt, to taste
- Oil
For the Topping:
- 1/2 cup Homemade Hummus
- 1 tablespoon Butter (Salted)
- 1 cup Broccoli, cut into small florets
- 1 cup Cherry Tomatoes, slit into halves
- 1 Onion, sliced
- 4 cloves Garlic, finely chopped
- 1 teaspoon Sugar
- 1 teaspoon Black Pepper Powder
- 1 teaspoon Cumin Powder (Jeera)
- Salt, to taste

Prepare the Soft Tacos:
- In a large bowl, combine the jowar, bajra, and whole wheat flours. Add salt to taste.
- Gradually add water and knead the mixture into a soft dough. Once the dough is ready, cover it with a cloth and let it rest while you prepare the toppings.

Prepare the Hummus:

Prepare the Boiled Eggs:
- Boil the eggs, peel them, and cut them into quarters. Set aside for later.

Make the Topping:
- In a skillet, melt butter over medium heat. Add the garlic and sauté until soft.
- Add the sliced onion and cook until golden brown. To enhance caramelization, add a teaspoon of sugar.
- Stir in the broccoli florets and cherry tomatoes. Season with salt, black pepper, and cumin powder. Cover and cook for 3-4 minutes, or until the broccoli is tender and bright green.
- Turn off the heat and set the vegetable mixture aside.

- Divide the rested dough into medium-sized balls. Dust each ball with whole wheat flour and gently roll it out into a round shape.
- Preheat a skillet over medium heat. Cook each rolled taco on both sides until light brown spots appear. Ensure they become lightly crisp but remain soft in texture. Set aside.

- Take a soft taco and spread a tablespoon of hummus evenly on the surface.
