  • 1/2 cup White Urad Dal (Whole)
  • 1/2 cup Instant Oats (roasted)
  • 1 teaspoon Baking Soda
  • Salt, to taste

For the Yogurt Mixture:

  • 1 cup Curd (Dahi / Yogurt)
  • 2 tablespoons Sugar
  • Water, as required

For the Garnish:

  • 1 teaspoon Red Chilli Powder
  • 1 teaspoon Coriander Powder (Dhania)
  • 4 tablespoons Green Moong Sprouts

Preparation Time: 500 minutes (including soaking time)

Cooking Time: 60 minutes

Instructions

  1. Soak the Dal:

    • Soak the green moong dal and white urad dal in water for 8 hours or overnight.
  2. Prepare the Batter:

    • Drain the soaked dals and grind them into a smooth paste using a mixer.
    • Add the roasted oats to the batter and mix well. Set it aside while you prepare the yogurt mixture.
  3. Prepare the Yogurt Mixture:

    • In a bowl, whisk the curd with sugar and water until smooth. Adjust the consistency as desired. Refrigerate the yogurt mixture until ready to use.
  4. Cook the Vadas:

    • Preheat a kuzhi paniyaram pan (appe pan) and add a few drops of oil to each cavity.
    • Add salt and baking soda to the vada batter and mix well.
    • Drop a tablespoon of the batter into each cavity of the paniyaram pan. Cover and cook for 2 minutes.
    • Flip the vadas and cook for another 2 minutes or until golden and crispy.
  5. Soak the Vadas:

    • Once the vadas are cooked, remove them from the pan and immediately drop them into the prepared yogurt mixture. Let them soak for about 20 minutes in the refrigerator.
  6. Serve the Dahi Vada:

    • Before serving, garnish with red chilli powder, coriander powder, and green moong sprouts.
    • Optionally, drizzle tamarind-date chutney and dhaniya-pudina chutney on top for added flavor.
