Coriander Powder (Dhania) 1 teaspoon
Garam Masala Powder 1/2 teaspoon
Turmeric Powder (Haldi) 1/4 teaspoon
Hung Curd (Greek Yogurt) 1/4 cup
Kasuri Methi (Dried Fenugreek Leaves) For garnishing
Salt To taste
Oil For cooking

Instructions

  1. Make the Koftas:

    • Begin by placing the paneer (homemade cottage cheese) in a bowl. Mash it well to ensure there are no lumps.
    • Add the all-purpose flour (maida), a pinch of salt, chopped coriander leaves, and cumin powder to the mashed paneer.
    • Knead the mixture together to form a smooth, firm dough. The dough should hold its shape but remain soft enough to form balls.
  2. Shape the Koftas:

    • Divide the dough into small portions and roll them into smooth, round balls.
  3. Cook the Koftas:

    • Heat a kuzhi paniyaram pan and lightly grease it with oil. Place the koftas in the pan, cooking them on medium heat until they are golden brown and crispy on all sides.
    • Alternatively, if you do not have a kuzhi paniyaram pan, you can bake the koftas in a preheated oven at 180°C (350°F) for about 20 minutes or until they are golden brown.
  4. Prepare the Gravy:

    • While the koftas are cooking, heat a tablespoon of oil in a pan over medium heat. Add the grated ginger and sauté for a minute.
    • Add the honey and stir in the homemade tomato puree. Let it cook for 5-7 minutes until the mixture thickens slightly.
    • Add the coriander powder, garam masala, and turmeric powder, and stir well to incorporate the spices into the gravy.
    • Reduce the heat and add the hung curd (Greek yogurt) to the curry base, stirring to create a creamy texture. Allow the curry to simmer for another 5 minutes.
  5. Combine the Koftas with the Gravy:

    • Once the koftas are ready, carefully add them to the simmering gravy. Let the koftas soak in the gravy for another 5-10 minutes, allowing them to absorb the flavors.
  6. Garnish and Serve:

    • Sprinkle dried fenugreek leaves (kasuri methi) over the curry for an aromatic touch.
    • Serve the Paneer Kofta Curry hot, with steamed rice, roti, or naan.
