Pumpkin Coconut Ladoo

Pumpkin Coconut Ladoo is a delicious, power-packed sweet energy ball made with yellow pumpkin and desiccated coconut. Ingredients:

  • 1 1/2 cups grated Kaddu (Parangikai/ Pumpkin)
  • 1 cup desiccated coconut
  • 4 tablespoons cane sugar
  • 1/8 teaspoon nutmeg powder
  • 1/8 teaspoon cardamom powder (elaichi)
  • 1 tablespoon ghee

Preparation Time: 5 minutes
Cooking Time: 10 minutes

Instructions:

  1. Prepare the Ingredients: Grate the pumpkin and keep all the ingredients ready.
  2. Roast Coconut: In a non-stick kadai, dry roast the desiccated coconut on medium heat until it becomes aromatic. Set aside.
  3. Cook the Pumpkin: Add the grated pumpkin to the same pan and cook until it becomes mushy. Stir occasionally and mash the pumpkin with the back of the ladle once it softens.
  4. Combine Coconut & Sugar: Save about 2 tablespoons of the roasted coconut for later coating. Add the remaining coconut into the pan with the pumpkin and mix well using a wooden spoon. Add cane sugar and mix until fully combined.
  5. Add Spices & Ghee: Add the ghee, nutmeg, and cardamom powder to the pan. Stir until the mixture thickens and starts to come together without sticking to the pan. Switch off the heat and allow the mixture to cool.
  6. Shape the Ladoo: Once the mixture is cool enough to handle, shape it into small lemon-sized balls. Coat each ball with the reserved desiccated coconut.
  7. Serve and Store: Store the ladoos in an airtight container. Serve as a snack or post-workout treat, and enjoy with a glass of Turmeric Milk for added health benefits.
