Ingredients:

  • Ragi Flour (Finger Millet/ Nagli) – 2 tablespoons
  • Onion – 1, finely chopped
  • Ginger – 1 inch, finely chopped
  • Carrots (Gajjar) – 1/4 cup, finely chopped
  • Green Beans (French Beans) – 1/2 cup, finely chopped
  • Whole Almonds (Badam) – 1/2 cup, soaked
  • Salt – to taste
  • Whole Black Peppercorns – 1/2, coarsely pounded
  • Cumin Powder (Jeera) – 1 teaspoon
  • Ghee – 1 tablespoon

Preparation Time: 15 minutes

Cooking Time: 10 minutes

Instructions:

  1. Soak Almonds: Begin by soaking almonds in hot water for 15-20 minutes. Peel off the skins and blend the almonds into a smooth paste.
  2. Prepare the Ragi Base: In a separate bowl, dissolve the ragi flour and almond paste in 2 1/2 cups of water. Set aside.
  3. Cook Vegetables: Add the chopped carrots and green beans to a pressure cooker. Add 1 tablespoon of water and a pinch of salt. Pressure cook for 1 whistle, then turn off the heat and release the pressure immediately to preserve the fresh color of the vegetables.
  4. Sauté Onions and Ginger: In a saucepan, heat a little oil, and sauté the finely chopped onions and ginger until the onions become translucent.
  5. Combine and Simmer: Add the ragi-almond mixture to the sautéed onions and ginger, and bring to a boil. Stir continuously, ensuring the ragi thickens and forms a smooth soup-like consistency. Add more water if necessary to adjust the soup’s consistency.
  6. Add Vegetables and Seasonings: Once the soup mixture is well-cooked, add the cooked vegetables, ghee, black pepper, cumin powder, and salt to taste. Let the soup briskly boil, adjusting the seasoning as needed.
  7. Serve: Serve this wholesome and nutritious Ragi Badam Soup as a healthy, diabetic-friendly dinner. It makes a perfect one-dish meal.

Enjoy the heartwarming flavors of Ragi Badam Soup with vegetables for a nutritious, diabetic-friendly Indian dinner!
