Cumin seeds (jeera) 1 tablespoon
Garlic cloves 5 cloves
Oil 2 tablespoons
Turmeric powder ½ teaspoon

Instructions:

  1. Prepare the Potatoes:
    Begin by boiling the small potatoes. Once cooked, peel the potatoes and cut them into two halves.

  2. Roast Sesame Seeds:
    Take a pan or tawa and roast the white sesame seeds on medium heat. Roast them until they turn slightly golden and fragrant.

  3. Make the Sesame Paste:
    Transfer the roasted sesame seeds to a mixer jar. Add a little water and grind them into a smooth paste. Remove the paste and set it aside in a bowl.

  4. Make the Coriander Paste:
    In the same mixer jar, add fresh coriander leaves, green chilies, garlic cloves, and turmeric powder. Add a bit of water and grind these ingredients into a smooth paste.

  5. Cooking the Aloo:
    Heat oil in a pan. Add cumin seeds and let them splutter. Once they begin to pop, add the prepared coriander paste to the pan. Stir the paste for about a minute, allowing the flavors to blend well.

  6. Combine Potatoes and Paste:
    Add the boiled potato pieces to the pan along with salt. Stir well to coat the potatoes evenly with the paste. Keep stirring until the potatoes are fully coated and the paste starts to form a nice layer on the potatoes.

  7. Add Sesame Paste:
    Add the sesame paste to the potatoes along with a small amount of water. Cook for 3-4 minutes, allowing the flavors to meld together.

  8. Garnish and Serve:
    Turn off the heat. Garnish the Til Ke Aloo with extra fresh coriander and sesame seeds. Serve hot.
