Tofu & Beef Bowl – Gyudon: A Super Healthy Delight

Elevate your meal with this nutritious and delectable Tofu & Beef Bowl, inspired by the traditional Japanese Gyudon. This dish combines the rich flavors of tender beef, savory tofu, and aromatic onions with a light, healthy twist. Perfect for a quick weeknight dinner or a satisfying lunch, it’s both easy to make and delicious.

Ingredients

  • 2 medium onions, sliced
  • 350 grams thinly sliced beef
  • 1 block firm tofu, cut into cubes
  • 3 tablespoons Japanese soy sauce (Kikkoman or similar)
  • 1 teaspoon mushroom or beef bouillon
  • 4 tablespoons apple juice

Instructions

  1. Prepare the Onions: Begin by heating a frying pan over medium heat. Add the sliced onions and sauté for about 3 minutes, or until they start to become translucent and fragrant.

  2. Add the Beef: Push the onions to the sides of the pan, creating space in the center. Add the thinly sliced beef to the center of the pan. Allow it to sear and cook slightly before adding other ingredients.

  3. Incorporate the Tofu and Seasonings: Place the cubed tofu around the edges of the pan. Pour the soy sauce, bouillon, and apple juice over the beef in the center. Mix gently to combine all the ingredients, ensuring that the beef and tofu are well-coated with the sauce.

  4. Simmer: Cover the pan with a lid and reduce the heat to medium. Let it simmer for 5 minutes, allowing the flavors to meld together and the beef to become tender.

  5. Stir and Cook: Remove the lid and stir the ingredients to ensure even cooking. Continue to cook over low to medium heat for an additional 5 minutes, or until the beef is fully cooked and the tofu is heated through.

  6. Serve: Once everything is well-cooked and seasoned, remove the pan from heat. Serve your Tofu & Beef Bowl hot, garnished with additional sliced green onions or sesame seeds if desired.

Enjoy this flavorful and wholesome bowl of Tofu & Beef, a perfect balance of savory, sweet, and umami tastes that make for a healthy and satisfying meal.
