Tofu Fried Rice Recipe – A Perfect Indo-Chinese Delight

Instructions:

  1. Prepare the Rice:

    • Begin by washing the rice thoroughly and soaking it in water for about 15 minutes.
    • After soaking, add the rice to a saucepan with a bay leaf and a pinch of salt.
    • Cook the rice until it is about half done, then drain the water. Keep the rice aside.
  2. Fry the Tofu:

    • In a pan, heat oil and fry the tofu pieces until they turn golden brown and crispy on both sides. Once fried, remove them from the pan and set them aside.
  3. Cooking the Vegetables:

    • In the same pan, add a little more oil and let it heat up.
    • Add the chopped garlic and sauté for 30 seconds, allowing the fragrance to release.
    • Next, add the chopped onions and green onions, cooking them until the onions become soft and translucent.
    • Stir in the ginger-garlic paste and cook for another minute.
    • Add the chopped green bell pepper, carrot, and sliced mushrooms. Cook the vegetables until they soften, stirring occasionally.
  4. Adding Sauces and Seasoning:

    • Add the green chili sauce, soy sauce, and a pinch of salt to the vegetables. Mix well to combine all the flavors.
  5. Combine Tofu and Rice:

    • Now, add the fried tofu cubes to the pan, followed by the cooked rice. Gently toss everything together to mix well.
    • Allow the fried rice to cook for an additional 2-3 minutes, letting all the ingredients blend together.
  6. Garnish and Serve:

    • Once the tofu fried rice is ready, garnish it with freshly chopped green onion leaves for a burst of flavor and color.
