  1. Heat Oil: Start by heating 1 tablespoon of oil in a deep pan or wok (kadhai) over medium heat.

  2. Cook Garlic: Once the oil is hot, add 7 chopped garlic cloves and sauté them for about 20 seconds until fragrant.

  3. Sauté Onions: Add 1 chopped onion to the pan and cook it until it softens and turns translucent.

  4. Add Carrot: Once the onions are soft, add 1 finely chopped carrot. Stir well and season with salt to taste. Cover the pan and let it cook for about 3 minutes. The goal is to cook the carrots just halfway, maintaining some crunch.

  5. Add Tomatoes and Spices: After the carrots have softened slightly, add the chopped tomatoes and crushed black pepper. Stir everything well and allow it to cook for an additional minute.

  6. Add Water: Now, pour in enough water to cover the vegetables and cover the pan. Let the mixture cook until the tomatoes become soft and fully cooked.

  7. Cool and Strain: Once the vegetables are tender, turn off the heat and allow the mixture to cool down. Once cooled, strain the mixture to separate the vegetables and the water. Keep the vegetable broth aside for later use.

  8. Blend the Vegetables: Put the cooked vegetables into a blender and blend them into a smooth purée.

  9. Reheat and Mix: Pour the reserved vegetable broth back into the pan and add the blended purée. Stir well and heat the mixture on medium heat for 1 minute.
