Instructions

  1. Cook the Rice:
    Begin by pressure cooking 4 cups of rice with water and a pinch of salt. Cook until you hear 2 whistles and the rice is soft and fluffy. Set it aside.

  2. Prepare the Tempering:
    In a large pan, heat 2 tablespoons of ghee over medium heat. Once the ghee is hot, add the cinnamon stick, cloves, and cardamom. Let them cook for about 15 seconds until aromatic.

  3. Sautรฉ the Onions:
    Add the thinly sliced onion to the pan and sautรฉ it until it becomes soft and translucent, about 3-4 minutes.

  4. Add Ginger and Garlic:
    Stir in the grated ginger and garlic, and cook for an additional 1 minute, allowing the flavors to blend.

  5. Cook the Tomatoes:
    Add the finely chopped tomatoes to the pan and cook them down until they soften and release their juices, about 5-7 minutes.

    Once the tomatoes are soft, add the red chili powder, coriander powder, garam masala powder, and salt. Stir well to combine and let it cook for another 3-4 minutes.

  7. Add Fenugreek:
