Instructions

  1. Prepare the Dosa Mix: Begin by placing the Idli dosa mixture in a mixing bowl. If you’re using store-bought mix, ensure it’s well hydrated, as this will help create a smooth batter perfect for uttapams.

  2. Chop the Vegetables: Finely chop all the vegetables — onion, capsicum, carrot, and tomato. Prepare the green chilies and coriander leaves by chopping them finely as well. Set these aside to be used later.

  3. Heat the Pan: Take a non-stick pan or tawa and grease it lightly with oil. Heat the pan over medium flame.

  4. Make the Uttapam: Once the oil is hot, pour a generous ladle of the Idli dosa mixture into the center of the pan, spreading it out into a thick round shape. The thickness should be slightly more than a regular dosa, as uttapam is meant to be fluffier.

  5. Add the Vegetables: Sprinkle the finely chopped vegetables (onion, capsicum, carrot, and tomato) evenly on top of the uttapam. Press the vegetables gently into the batter to help them stick. Pour a little oil around the edges of the uttapam to help it cook evenly and turn crisp.

  6. Cook the Uttapam: Allow the uttapam to cook for a few minutes until the edges start to turn golden brown and the bottom is cooked. Carefully flip the uttapam using a spatula, add a little oil, and let it cook for another 2-3 minutes until it becomes golden and crispy on both sides.

  7. Serve: Once the uttapam is cooked perfectly on both sides, transfer it to a plate. Serve hot with your choice of Mixed Vegetable Sambar and Coconut Chutney for an authentic South Indian breakfast experience.
