Vegetarian Burrito Recipe
Category: Main Dishes
Serves: 4

Ingredients:

Ingredient Quantity
Flour tortillas 8
Pre-cooked borlotti beans 250g
Corn 140g
Button mushrooms 100g
Red bell pepper 1
White onion 1
Ripe tomatoes 1
Zucchini 1
Iceberg lettuce 3 leaves
Extra virgin olive oil 4 tbsp
Black pepper To taste
Salt To taste

Instructions:

  1. Prepare the Ingredients:
Begin by draining the pre-cooked borlotti beans and corn. Set them aside in a bowl, ensuring no excess water remains.

  2. Sauté the Vegetables:
In a large skillet, heat 4 tablespoons of extra virgin olive oil over medium heat. Once the oil is hot, add the white onion, finely chopped, and sauté until translucent and slightly golden. Add the borlotti beans and corn to the pan, stirring well to combine. Season with salt and black pepper to taste. Cover the pan and allow the mixture to cook for about 10 minutes, stirring occasionally.

  3. Prepare the Other Vegetables:
While the beans and corn are cooking, slice the button mushrooms, red bell pepper, and zucchini into thin slices or small cubes, depending on your preference. Dice the ripe tomato as well, removing any seeds if you prefer a less watery filling. Set all these vegetables aside for the next step.

  4. Warm the Tortillas:
To warm the tortillas, you can either use a microwave or a non-stick pan. If using the microwave, place the tortillas on a plate and cover with a damp paper towel. Heat them for about 30 seconds to 1 minute, or until soft and warm. If using a non-stick pan, heat each tortilla for 1-2 minutes on each side, until lightly toasted.

  5. Assemble the Burritos:
Once the tortillas are warm and pliable, it’s time to assemble your burritos. Lay one tortilla flat on a clean surface. In the center, place a generous scoop of the cooked borlotti bean and corn mixture. Add a handful of sliced mushrooms, red bell pepper, zucchini, and fresh tomato. Top with a few leaves of iceberg lettuce, shredded or chopped to your liking.

  6. Fold the Burritos:
To fold the burrito, first fold in the sides of the tortilla towards the center, then gently roll up from the bottom, tucking the ingredients inside as you go, forming a neat bundle. Be sure to roll tightly, securing all the fillings within.

  7. Serve and Enjoy:
Serve the vegetarian burritos warm, and if desired, accompany with a side of salsa, guacamole, or a light drizzle of sour cream. Enjoy your wholesome, vegetarian meal full of fresh, vibrant ingredients that come together in every bite!
