- 4 Whole Eggs
- 1 Green Zucchini, grated
- 1 Onion, finely chopped
- 1/2 cup Coriander (Dhania) Leaves, finely chopped
- 1 Green Chilli, finely chopped
- 2 tablespoons Instant Oats (Oatmeal)
- 1/2 teaspoon Black Pepper Powder (or to taste)
- Salt, to taste
- Oil, for brushing

Cooking Time: 15 minutes
Instructions:
- Start by grating the zucchini and placing it in a mixing bowl. Add a pinch of salt and mix well. Allow the zucchini to stand for a few minutes to release its water.
- Squeeze out the excess water from the zucchini and set it aside.
- In a separate bowl, whisk the eggs until light and fluffy.
- Add the chopped onion, grated zucchini, green chili, oats, salt, and black pepper to the eggs. Mix well to combine.
- Heat a skillet over medium flame and brush lightly with oil.
- Using a small ladle, pour a portion of the egg mixture onto the skillet, forming small discs (about 3 inches in diameter).
- Pour a bit of oil around the edges and cook for 2 minutes. Flip the omelette and cook for another 2 minutes on the other side.
- Remove from the skillet and set aside. Repeat the process with the remaining egg mixture.
- Serve the Zucchini Oatmeal Omelette with a freshly made Chocolate Banana Smoothie or Apple Almond Date Smoothie, along with a slice of toast for a wholesome breakfast.
