Instructions

  1. Prepare the Rose Petals

    • Begin by washing and drying the rose petals thoroughly. It’s important to ensure they are edible and organic, as non-edible roses might have been treated with chemicals.
    • Next, brush each petal with lightly beaten egg white. This will help the sugar stick to the petals.
    • After brushing, sprinkle the petals with a fine coating of sugar and spread them out on a sheet of greased parchment paper. Allow the petals to dry completely. This step can take up to several hours or can be prepared the night before to allow the petals to fully crisp up.
  2. Preheat the Oven

    • Preheat your oven to 200°C (390°F) to get it ready for blind baking the tart shell.
  3. Roll Out the Puff Pastry

    • Prick the bottom of the puff pastry shell with a fork to prevent puffing. Place the dish into the refrigerator for 15 minutes to chill and firm up the pastry.
