Recipe: Beef Stew Pot

Description: 🥘 My wayward adaptation of POT AU FEU. Very versatile, filling, and nutritious. Don’t be afraid of the allspice! It goes great with the beef. I make this often. Tastes better than canned beef stew, and you can be creative with it. Serve with a hearty loaf of bread and real butter. 😋

Ingredients:

10 Turnips
4-5 Parsnips
2-3 Onions
8-10 Carrots
2-3 Celery ribs
2 Fresh tomatoes
1-2 Tomato sauce
8 Cups water
4-6 Allspice
1 Pepper
1 Paprika
1 Garlic clove
1 Cayenne pepper
3 Bay leaves
1 Cup peas

Instructions:

  1. In a very large pot, place stew meat and cover with cold water.
  2. Bring to a slow boil.
  3. Skim the top often until the broth is clear of any “junk.”
  4. When the broth has cleared, stir in all seasonings, tomato sauce, and prepared vegetables (except for peas).
  5. Bring to a boil, stir, and turn the heat to low-medium. Let it simmer slowly.
  6. The stew will make its own thickening as it simmers.
  7. Simmer for 3-5 hours, stirring occasionally.
  8. Stir in peas about 30 minutes before serving.
  9. Adjust seasoning to taste.
