Hearty Asian Beef Soup with Aromatic Spices

Simple Beef Soup (Sop Daging Sapi Simple)

Ingredients:

  • 500 grams beef, cut into pieces
  • 500 grams carrots, peeled and sliced
  • 1 tomato, diced
  • 6 shallots, thinly sliced
  • 4 garlic cloves, smashed
  • 1/2 inch piece ginger, smashed
  • 1/2 nutmeg seed
  • 4 stalks green onions
  • 1 medium cinnamon stick
  • 1 cardamom pod
  • 1 star anise
  • Salt, to taste
  • Beef stock, to taste
  • Water, as needed

Instructions:

  1. Prepare the Beef:

    • Place the beef pieces into a large pot. Cover with water and bring to a boil. Add the cardamom pod, ginger, nutmeg seed, cinnamon stick, and star anise. Simmer until the beef is partially tender.
  2. Fry the Aromatics:

    • In a separate pan, heat oil over medium heat. Fry the shallots until they turn golden brown and crispy. Remove and drain on paper towels.
    • Using the same oil, fry the smashed garlic cloves until golden brown. Pour the garlic along with the oil into the pot with the beef.
  3. Simmer the Soup:

    • Continue to cook the beef until it becomes tender. Add the sliced carrots, green onions, and diced tomato. Season with salt and beef stock to taste. Adjust the seasoning as needed.
  4. Final Touches:

    • Let the soup simmer until the carrots are cooked and the flavors meld together. Taste and adjust seasoning if necessary.
  5. Serve:

    • Once the beef and vegetables are tender, the soup is ready to be served. Enjoy your hearty and flavorful beef soup!
