Beef and Bone Soup Recipe

Ingredients:

  • 1 kg beef bones
  • 1/2 kg beef meat or scraps
  • 3 potatoes
  • 5 carrots

For the Spice Paste:

  • 10 cloves garlic
  • 10 shallots
  • 1 piece of ginger (about 1-inch)
  • 1/4 nutmeg
  • 1 teaspoon white pepper
  • Salt to taste
  • Sugar to taste
  • Royco seasoning to taste (or other seasoning of choice)

For Garnishing:

  • Sliced celery
  • Fried shallots
  • Sambal (spicy chili paste)

Instructions:

  1. Prepare the Beef and Bones:

    • Begin by boiling the beef bones and meat in a large pot until tender. To speed up the process, you can add a pinch of baking soda to the water, which helps to soften the meat faster. Once tender, drain and rinse the meat and bones under cold water to remove any impurities.
  2. Reboil the Meat:

    • Return the cleaned beef and bones to the pot and continue boiling. This step ensures that all flavors are infused into the meat.
  3. Prepare the Spice Paste:

    • While the meat is cooking, prepare the spice paste. Blend together garlic, shallots, ginger, nutmeg, and white pepper until smooth.
  4. Cook the Spice Paste:

    • In a separate pan, sauté the spice paste until it becomes fragrant and slightly caramelized. This will release the essential oils and deepen the flavor.
  5. Combine Ingredients:
