Beef and Bean Soup (Sup Kacang Daging Sapi)
Ingredients:
- 250 grams beef (cut into cubes)
- 200 grams kidney beans (or red beans as a substitute)
- A few leaves of Chinese cabbage
- 2 stalks of scallions
- 5 cloves shallots
- 3 cloves garlic
- 1 teaspoon ground black pepper
- Salt, sugar, and mushroom stock powder, to taste
- Water
Instructions:

Prepare the Beef:
- Wash the beef cubes thoroughly. Place them in a pot with water and bring to a boil. Boil for 15 minutes, then discard the water. This step helps remove excess impurities.
- Refill the pot with fresh water and continue boiling the beef until it becomes tender.

Prepare the Beans:
- Rinse the kidney beans under cold water. Soak them in water for at least 1 hour to soften.

Cook the Beans:
- Once the beef is nearly tender, add the soaked kidney beans to the pot. Cook until the beans are soft and fully cooked.

Prepare the Aromatics:
- While waiting for the beef and beans to cook, thinly slice the shallots and garlic. Heat a little oil in a pan and sauté the shallots and garlic until fragrant.

Combine Ingredients:
- Add the sautéed shallots and garlic to the pot with beef and beans. Season with ground black pepper, salt, sugar, and a pinch of mushroom stock powder. Stir well to combine all the flavors.

Finish the Soup:
- Add the Chinese cabbage leaves and chopped scallions to the pot. Cook for a few more minutes until the vegetables are wilted and tender.

- Once everything is cooked to your desired tenderness, remove the pot from heat. Ladle the soup into bowls and serve hot.
