Beef and Meatball Soup (Sop Daging Sapi Campur Baso)

Ingredients:

  • 500 g beef and bones
  • 3 bunches of caisim (Chinese mustard greens)
  • 2 stalks of green onions
  • 2 carrots
  • 1 tomato
  • 1 sweet corn
  • 2 stalks of celery
  • 4 cloves of garlic
  • To taste: black pepper, salt, and sugar
  • 3 shallots
  • 200 g meatballs

Instructions:

  1. Prepare the Aromatics: Begin by finely grinding the garlic, black pepper, and salt together to create a seasoning paste. Set this aside.

  2. Cook the Beef: In a large pot, add the beef and bones along with enough water to cover them. Bring to a boil, then reduce to a simmer. Cook until the beef is tender and the flavors are well-developed, which usually takes about 1 to 1.5 hours.

  3. Prepare the Shallots: While the beef is cooking, slice the shallots thinly. Heat a small amount of oil in a pan and fry the shallots until they are crispy and golden brown. Remove from the oil and drain on paper towels.

  4. Prepare the Vegetables: While the beef is simmering, wash and chop the caisim, green onions, carrots, and celery. Cut the tomato into wedges and slice the sweet corn into rounds.

  5. Season the Soup: Once the beef is tender, stir in the garlic mixture you prepared earlier. Add the meatballs to the pot and cook for a few more minutes until they are heated through.

  6. Add the Vegetables: Add all the chopped vegetables to the pot. Simmer until the vegetables are tender, about 10-15 minutes. Adjust the seasoning with salt and sugar to taste.

  7. Finish the Soup: Once the vegetables are cooked and the flavors are balanced, serve the soup hot. Garnish each bowl with a generous sprinkle of crispy fried shallots.
