Beef and Meatball Soup (Sop Daging Sapi Campur Baso)
Ingredients:
- 500 g beef and bones
- 3 bunches of caisim (Chinese mustard greens)
- 2 stalks of green onions
- 2 carrots
- 1 tomato
- 1 sweet corn
- 2 stalks of celery
- 4 cloves of garlic
- To taste: black pepper, salt, and sugar
- 3 shallots
- 200 g meatballs
Instructions:
-
Prepare the Aromatics: Begin by finely grinding the garlic, black pepper, and salt together to create a seasoning paste. Set this aside.
-
Cook the Beef: In a large pot, add the beef and bones along with enough water to cover them. Bring to a boil, then reduce to a simmer. Cook until the beef is tender and the flavors are well-developed, which usually takes about 1 to 1.5 hours.
-
Prepare the Shallots: While the beef is cooking, slice the shallots thinly. Heat a small amount of oil in a pan and fry the shallots until they are crispy and golden brown. Remove from the oil and drain on paper towels.
-
Prepare the Vegetables: While the beef is simmering, wash and chop the caisim, green onions, carrots, and celery. Cut the tomato into wedges and slice the sweet corn into rounds.
-
Season the Soup: Once the beef is tender, stir in the garlic mixture you prepared earlier. Add the meatballs to the pot and cook for a few more minutes until they are heated through.
-
Add the Vegetables: Add all the chopped vegetables to the pot. Simmer until the vegetables are tender, about 10-15 minutes. Adjust the seasoning with salt and sugar to taste.
-
Finish the Soup: Once the vegetables are cooked and the flavors are balanced, serve the soup hot. Garnish each bowl with a generous sprinkle of crispy fried shallots.
-
Enjoy Your Soup: Serve this hearty beef and meatball soup hot, perfect for warming up on a chilly day. 😋
This recipe creates a comforting and flavorful soup, combining tender beef, savory meatballs, and fresh vegetables. The addition of crispy shallots adds a delightful crunch to each bowl. Enjoy this warming dish with family and friends for a satisfying meal!
